hello - quick question: i have been running an ipfs node for quite a while now and was actually expecting to automatically be hosting some data but nothing is coming in. do i manually have to pin data in order to "host" it?

Pinning isn't necessary, but it's the easiest way

Your node will host any data it downloads, pinning makes sure it isn't removed

ok but if i host the node on a server without GUI - it never downloads anything right?

Pinning will also make sure you have all the data which is part of an object

GUI doesn't affect anything, it's the act of requesting data from the network that matters

A GUI is just an alternate interface

ok that came across the wrong way - what i meant was: running it on a server without any interaction (active lookups, ipfs web surfing etc) no data flows through the node in this scenario right? as a result no data gets saved.

bummer. i wanted to contribute to the network like this and share storage space but i guess that does not work.

also fwiw even just running a node is at least contributing something to the network, your node will be helping maintain the DHT and such

you might also want to look at filecoin, although then you're getting into cryptocurrency and stuff as well, which is not as simple as "just pin some stuff" :P
