I'm wondering what the best option is. Use some "keep"="true" on some signals that just happen to make yosys generate the logic I want and hope something doesn't influence / change that behavior. Or just plain instanciate the LUTs.

Yeah. Well actually the version of it that also optimizes for area ideally.
